Autumn is here. Time to get back to work đŸ˜¦ . But don’t worry, here is a recipe that will take you back to summer again & that will save your lunch break tomorrow!
A super-quick red white & green pasta salad with peas & tomatoes.
To serve 2 you will need:
- 150g short pasta
- 2 handfuls frozen peas
- 1 big tomato
- 1 (or 2) mozzarella(s)
- olive oil
- salt  & pepper
Prep & cook time: 20 min.
I like to use small sized pasta that takes less to cook. These take only 6 minutes!
First things first: put a saucepan of water on the hob with a few pinches of salt.
While the water heats up, cut the mozzarella and the tomato in cubes.
As soon as the water comes to the boil, pour the pasta and the frozen peas in the saucepan.
Count 6 minutes from when it starts to boil again.
Don’t overcook.
Drain and transfer to a bowl.
Add a little olive oil and the cubed tomatoes, then give it a stir.
At this point I prefer to leave the salad to cool down a little before adding the mozzarella, as I don’t want it to melt.
Add the mozzarella when you’re ready, give it another stir and you’re done! Simple, quick and colourful.
I told you it was easy! Eat straight away or fill a pot and it will be perfect for a picnic, a barbeque or to take to work.
And it will keep in the fridge for a few days.
